Choose the right Hops

All varieties available at Cedar Rim Nursery

Cascade:

4.5 – 7% Alpha Acid Content
The premier aroma Hop. A strong verdant aroma with notes of spice and citrus. Medium sized compact yellow cones with strong disease resistance. Typically used for a wide variety of ales, but is also seen in fruit wheat beers and occasionally porters.

 


Centennial:

9.5 – 11.5% Alpha Acid Content
Similiar to Cascade but with a lighter citrus and stronger floral aroma – higher alpha acid makes this variety better suited for beers where bottom line bitterness and top end aroma are desired such as IPA’s. Medium sized dark yellow cones with strong disease resistance. Typically used for a wide variety of ales and extra special bitters.


Chinook:

12-14% Alpha Acid Content
Dual purpose Hop with heavy aroma and spicy boquet with notes of herbs and pine. Medium sized dark yellow compact cones with strong diesease resistance. Typically used for pale ales and IPA’s but extends itself well to seasonal ales and darker beers such as porter and stout.


Mt. Hood:

4.0 – 8.0% Alpha Acid Content
Primarily used as an aroma Hop. Very well tempered bitterness and a warm, spicy aroma. Typically used for a variety of ales, lagers, wheat beers and occasionally stouts.

 


Nugget:

9.5 – 14% Alpha Acid Content
An excellent dual purpose Hop with a rich green herbal aroma and underlying woody tones. Large sized very compact cones with strong disease resistance. Typically used for a variety of ales as well as wheat, stout and extra special bitters.

 


Williamette:

4.0 – 6.0% Alpha Acid Content
A wonderful aroma Hop with a delicate herbaceous spice and notes of both fruit and floral escence. Small to medium sized dark yellow cores. Used for a variety of ales, stouts, porters, wheat beers and extra special bitters.
